description: The delimited area entitled to the appellation Champagne extends over 31 458 hectares in north-eastern France within four sections: Aube on the east, the northern part called Montagne de Reims, the middle area, Vallée de la Marne, lies on the right bank of Marne River. The southern area near Epernay is known as the Cotes des Blanc, because it is largely planted in white Chardonnay grapes. Champagne itself it is, despite the other regions tradition, blend of different wines from different vintages, grapes and vineyards. The only grapes alloved to be used for Champagne are Chardonnay, Pinot Noir and Pinot Meunier. Champagne is treated like any other still wine, but in the spring, when the process of blanding takes place, the Champagne process begins. Various blends are selected according to the style of the winemaker- which is the same each year- and are then given precisely measured sugar and yeast solution: „the Liqueur de tirage“. This solution will ferment in bottles and are then left in the chilly subterranean cellars to mature. Thanks to the outstanding terroir, there is no more sparkling wine around the world like Champagne.
